கேரமல்பிரட்புட்டிங் செய்முறை:


1. கேரமல் பிரட் புட்டிங் செய்வதற்கு சர்க்கரை பாகு செய்ய வேண்டும் அதற்க்கு ஒரு பாத்திரத்தில் சர்க்கரை சேர்த்து பாகு நிலை வரும் வரை காய்ச்சவும்.


2. சர்க்கரை பாகை ஒரு பாத்திரத்தில் ஊற்றி பரப்பி வைக்கவும்.


3. அடுத்து ஒரு கிண்ணத்தில் கஸ்டர்ட் தூள் மற்றும் பால் சேர்த்து கரைத்துக்கொள்ளவும்.


4. அடுத்து பிரட் துண்டுகளை எடுத்து அதன் ஓரங்களை வெட்டி சிறு சிறு துண்டுகளாக பிய்த்து மிக்ஸியில் சேர்த்து தூளாக அரைத்துக்கொள்ளவும்.

செய்முறை

1. பீட்ரூட் ஹல்வா செய்வதற்கு ஒரு கடாயில் நெய் ஊற்றி சூடேற்றிய பின்பு அதில் துருவிய பீட்ரூட் சேர்த்து நன்கு வதக்கி கடாயை மூடி பத்து நிமிடம் வேகவைக்கவும்.


2. பத்து நிமிடம் கழித்து வேகவைத்த பீட்ரூட்டில் பால் மற்றும் இனிப்பில்லாத கோவா சேர்த்து நன்கு கலந்து பதினைந்து நிமிடம் மிதமான தீயில் வதக்கவும்.


3. பதினைந்து நிமிடம் கழித்து இதில் சர்க்கரை மற்றும் ஏலக்காய் தூள் சேர்த்து பால் வற்றும் வரை கிளறவும்.


4. இறுதியாக இதில் நெய் மற்றும் நெயில் வறுத்த முந்திரி பருப்புகளை சேர்த்து ஹல்வா பதம் வரும் குறைவான தீயில் கிளறவும்.

செய்முறை

1. செட்டிநாடு காளான் மசாலா செய்ய ஒரு மசாலா விழுது அரைக்க வேண்டும், அதற்கு ஒரு கடாயில் எண்ணெய் ஊற்றி சூடேற்றிய பின்பு இதில் மல்லி விதை, சீரகம், சோம்பு, மிளகு, காய்ந்த சிவப்பு மிளகாய், பூண்டு பற்கள், இஞ்சி சேர்த்து நன்கு வறுக்கவும்.


2. துருவிய தேங்காயை இந்த கலவையில் சேர்த்து நிறம் மாறும் வரை வதக்கவும்.


3. இந்த வறுத்த கலவையை மிக்ஸியில் சேர்த்து இதனுடன் ஒரு துண்டு ஊறவைத்த புளி மற்றும் தண்ணீர் சேர்த்து விழுதாக அரைக்கவும்.


4. காளான் மசாலா செய்ய கடாயில் எண்ணெய் ஊற்றி சூடேற்றிய பின்பு இதில் கடுகு, சீரகம், பொடியாக நறுக்கிய பெரிய வெங்காயம், பச்சை மிளகாய், கறிவேப்பிலை சேர்த்து நிறம் மாறும் வரை வதக்கவும்.


5. வெங்காயம் பொன்னிறமானவுடன் இதில் பொடியாக நறுக்கிய தக்காளி, மஞ்சள் தூள், மிளகாய் தூள், தேவையான அளவு உப்பு சேர்த்து நன்கு வதக்கவும்.

உப்பு
நறுக்கிய இஞ்சி - 1 தேக்கரண்டி

எலுமிச்சை சேமியா செய்முறை:

1. எலுமிச்சை சேமியா செய்ய ஒரு பாத்திரத்தில் தண்ணீர் ஊற்றி கொதிக்கவிடவும். தண்ணீர் கொதிநிலையை அடைந்தவுடன் சேமியாவை சேர்த்து அதில் தேவையான அளவு உப்பு சேர்த்து வேகவைக்கவும்.


2. சேமியா ஒன்றுடன் ஒன்று ஒட்டாமல் இருப்பதற்கு அதில் சிறிதளவு எண்ணெய் சேர்த்து வடிக்கட்டி எடுத்து வைக்கவும்.


3. அடுத்து ஒரு கடாயில் சிறிதளவு எண்ணெய் ஊற்றி சூடேற்றிய பின்பு அதில் உளுத்தம் பருப்பு, கடலை பருப்பு, கடுகு, காய்ந்த சிவப்பு மிளகாய், வேர்க்கடலை, பெருங்காயதூள், கறிவேப்பிலை சேர்த்து நன்கு கலக்கவும்.


4. சிறிது நேரம் கலந்தவுடன் இதனுடன் மஞ்சள் தூள், தேவையான அளவு உப்பு, பொடியாக நறுக்கிய இஞ்சி, பொடியாக நறுக்கிய பச்சை மிளகாய் சேர்த்து மிதமான தீயில் சிறிது நேரம் வதக்கவும்.

5. இந்த வதக்கியவற்றில் வேகவைத்த சேமியா மற்றும் எலுமிச்சை சாறு சேர்த்து நன்கு கிளறவும்.

Aloo Dum Biryani Receipe

Ingredients

For Paste:

Ginger - 1 piece
Garlic - 2 cloves
Green Chili - 2 nos
Red Chili - 2 nos
Curd - 1 tbsp
Mint Leaves
Coriander Leaves

For Biryani:

Basmati Rice - 200 ml
Baby Potatoes - 200 gms
Ghee
Oil
Onion - 2 nos
Tomato - 3 nos
Turmeric Powder - 1/4 tsp
Star Anise
Cardamom
Cinnamon
Clove
Bay Leaf
Saffron in Milk
Salt

Method of cooking

1. Rinse and soak the rice for 30 minutes.

2. Add oil to a pan and let it heat up. Add the finely sliced onions to the pan and saute it until they are brown. Set them aside.

3. In the same pan, add some oil and roast the baby potatoes till they are golden brown in color. Add turmeric powder and salt and saute them for a few seconds and set them aside.

4. Now, take a deep pot and boil some water in it. Add the soaked basmati rice to it.

5. Add the whole spices such as bay leaf, cloves, cardamom, cinnamon, star anise to the boiling water to add flavour to the rice and add some salt.

6. Cook the rice till it is 90% cooked and strain the rice and keep it aside.

7. Meanwhile, soak a few strands of saffron in warm milk.

8. To the make, the masala paste, add ginger, garlic, green chili, red chili, coriander leaves, mint leaves, and curd.

9. Grind this to a fine paste.

10. Take a large pan and add ghee to it and add the whole spices such as cinnamon, cardamom, cloves, and bay leaf.

11. Roast the spices in hot ghee for about 2 minutes.

12. Add the finely chopped tomatoes to the spices and saute it for about a minute.

13. Add the ground masala paste to the tomatoes and add salt and cook it till the raw smell disappears.

14. Add the roasted golden brown potatoes to the masala and saute it for about 2 minutes. 

15. Add half of the fried onions to the masala and mix it evenly.

16. Now layer the cooked rice on top of the potato masala and add the saffron milk and fri
ed onions and cook it closed for about 7 minutes.

CRISPY POTATO FRY

Ingredients

Potato - 4 nos
Oil
Salt to taste
Turmeric powder - 1/2 tsp
Chilli powder - 2 tsp

For Tempering:

Chana Dal - 1 tsp

Urad Dal - 1 tsp
Mustard seeds - 1 tsp
Cumin seeds - 1 tsp
Asafoetida powder - 1/2 tsp
Red Chilli - 2 nos
Few Curry leaves

Method:
1. Heat Oil in a wide pan. Add the Tempering ingredients Chana Dal, Urad Dal, Mustard seeds, Cumin seeds, Asafoetida powder & Red Chilli.

2. Add the Potato, Curry leaves & saute it till the Potatoes are half cooked.

3. Keep the flame low and add salt, turmeric powder and kashmiri chilli powder and saute well till the potatoes are cooked.

Chettinad Potato Roast

Ingredients

Potato - 5 no
Water
Oil - 2 tbsp
Mustard seeds - 1/2 tsp
Urad dal - 1 tsp
Chana dal - 1 tsp
Cumin seeds - 1/2 tsp
Red chili - 2 no
Turmeric powder - 1/4 tsp
Chili powder - 2 tsp
Salt - 1 tsp
Curry leaves

Method:


1.Take a pressure cooker, add 5 potatoes, enough water and cook for 3 to 4 whistles till they are cooked.

2.Cool the cooked potato and cut them into pieces.

3.Take a wide kadai, add 1 to 2 tbsp of oil, 1/2 tsp of Mustard seeds, 1 tsp of Urad dal, 1 tsp of chana dal, 1/2 tsp of cumin seeds, 2 Red chili and saute it.

4.Once mustard seeds start spluttering, add cut up potatoes with the mixture and mix it well with 1/4 tsp of turmeric powder, 2 tsp of chili powder, 1 tsp of salt and 2 tsp of chettinad masala powder.

5.Mix it all together for sometime in little heat.
Chettinad Potato Roast is ready .
